“Cooking is my passion and after 20 years I remain constantly intrigued and inspired by food. The food we serve is based on classic French cuisine, but after 13 years of running my own kitchen I have evolved my own personal style. We use the very best produce and aim to bring out the flavours of each ingredient. Sauces must have depth but remain light to enhance the ingredients. Our menu changes with the seasons, but every day we try new dishes and fresh combinations – things never stand still. Where do I get my inspiration? Mostly from my team – Alyn and Chantelle. Together we work on new ideas and develop them until we create dishes we are happy to present. We love to try new things for the Chef’s Table and these diners really do get a special menu.”
