
My New Restaurant
It has been a long time in the planning, but this week I was excited to make the announcement about my new venture, The Gilbert Scott in St. Pancras.
Opening in Spring 2011, The Gilbert Scott is going to be very different to here with a more informal edge. But before I can say anything else, what an amazing building! It’s absolutely stunning and really took my breath away when I first went on site earlier in the year. Working with David Collins the space is being transformed, whilst retaining many of the original details. The spacious dining room can seat up to 120 guests with a further 52 seats in the bar which will be a hub in itself. Focusing on British classics, we’re still in the process of designing the final dishes and putting the menu together, but we’ll definitely be using the finest British produce from all over the UK.
I am supported by a great team at The Berkeley and this second restaurant is the perfect opportunity to allow others the chance to grow. Chantelle Nicholson will be the General Manager of The Gilbert Scott. Chantelle has worked with me since 2004, she trained as a lawyer before becoming a chef, most recently she has been running operations here at Marcus Wareing at the Berkeley and even helped co-author my last book ‘Nutmeg and Custard’. I am delighted to be the one offering this opportunity to Chantelle and am sure she will do an amazing job.
As you already know, The Berkeley is like a second home to me so I have no desire to leave the kitchen. My role within The Gilbert Scott will be that of restaurant operator, so everything will have my stamp on it but the kitchen team I’ll announce in the months to come. I will be helping Chantelle every step of the way, with the menus, design choices and everything else in between.
It is already an exciting time of year with Christmas just around the corner and the restaurant busy every day, but now we have lots of arrangements to make for the new site which I’ll be sharing with you all as and when they happen.
