Anjou is found in the lower Loire in France. The pigeon from this area has a fantastic gamey flavour and is well known for it's quality. Our dish sees the Pigeon brined for 8 hours which breaks down the meat a little and helps to retain moisture. Then it is cooked slowly at 54° for 1 hour and finally roasted off in a pan before serving.
