Marcus is supported by an excellent team, many of whom have been with him for a number of years. Here are just some of the important people who work here at Marcus Wareing at The Berkeley:
Dimitri Bellos has moved quickly through the ranks at Marcus Wareing at the Berkeley becoming Assistant Manager within a year of joining the company in September 2008, the day Marcus opened his eponymous restaurant. It is clear to see that Dimitri has a history of hospitality working from a young age in the family restaurant in Corfu. After arriving in the UK Dimitri worked in Ireland at a number of five star properties before moving to London. Working with Giancarlo Princigalli since our opening, Dimitri has since taken over the position of Restaurant Manager. His exacting standards inspire those around him to be the best they can be.
Head Sommelier Michael Deschamps comes from Limoges, France. Michael learnt his trade in Bordeaux before working in Paris at a number of Michelin two and three starred restaurants, including Le Pré Catelan, Ledoyen and Le Relais D’Auteuil. In 2004 he came to London to work at The Square, before joining Marcus at Pétrus in 2006. Now Michael heads the team of sommeliers looking after our extensive wine list. He is always happy to share his enthusiasm and expertise with our guests.
Executive Group Chef Darren Velvick has a long history in our kitchens at The Berkeley. He began working with Marcus and Gordon Ramsay in 1999, taking leave of his position as Head Chef of Pétrus in 2006 to spend more time with his family. Darren then re-joined the team in 2010 to assist with the opening of The Gilbert Scott and to continue developing the kitchen teams with Marcus. He is now a strong leader for the brigade alongside Marcus and our Sous Chef Mark Froydenlund. Darren and Mark are passionate about food, ensuring that we work with the best suppliers and the most seasonal ingredients all year round.
Constanze Marx joined the company as Human Resource Advisor looking after the restaurant and our sister operation The Gilbert Scott. She works alongside The Gilbert Scott General Manager, Chantelle Nicholson, and is always enthusiastic about training and development for the whole team.
After 6 years at Gordon Ramsay Holdings, Nicola Monks joined Marcus in 2008 to head the office team as Reservations and Business Development Manager. Nicola has now moved to Hong Kong to start a new life! In her place we welcome Alex Owen previously of Heston Blumenthal's restaurant Dinner.
